Abstract

Just a little bit: The remarkable influence of a small change in the molecular geometry on the self-assembled structures of the acidic form of sophorolipids (SLs) derived from oleic, elaidic, and stearic acid is demonstrated. Most interestingly helical structures were seen only from SLs derived from elaidic acid (the trans conformer).
